Serves: 4-6 people
Ingredients:
- 200g jumbo oats (gluten-free if needed)
- 60g pecans, roughly chopped
- 2 tbsp milled flaxseed
- 1 ripe banana (about 120g)
- 2 tbsp maple syrup
- 3 tbsp coconut oil, melted
- 1 tbsp smooth peanut butter (preferably runny)
Instructions:
- Preheat the oven to 135°C (275°F).
- Mix the dry ingredients in a large bowl. Combine the oats, pecans and flaxseed.
- In a blender or with a hand blender, blitz the banana, maple syrup, melted coconut oil and peanut butter until smooth.
- Pour the wet mixture into the dry ingredients and stir until everything is well coated.
- Spread the mixture evenly on a baking tray lined with parchment paper. Bake for 20 minutes.
- Remove from the oven, break the mixture into chunky clusters and gently stir. Return to the oven for another 25 minutes, tossing once or twice for even cooking.
- Leave the granola to cool completely on the tray. It should feel crisp at the edges but will firm up as it cools.
- Store in an airtight container or jar for up to two weeks.
