Red Dragon Pie
Catherine, the owner here at Grampian Health Store, shared this gem of a recipe with me a few years ago. Featuring Aduki beans packed full of dietary fibre, protein, manganese, iron and folate this has become my go-to recipe when I need a quick nutritious meal to keep me going strong through the long scottish winters.
If you haven't tried Red Dragon Pie before, you're in for a real treat!
INGREDIENTS
1 x 400g tin Aduki Beans (I use Biona Organic Aduki beans which are ready cooked)
1 x onion
2 x carrots
1 tablespoon extra virgin olive oil
2 tablespoons soy sauce
2 tablespoons tomato puree
1 teaspoon mixed herbs
salt & pepper (I use himalyan pink mountain salt and fresh black pepper)
450g peeled potatoes
25g (1oz) Your choice of butter/ butter substitute (I use Pure Soya spread)
METHOD
Heat your oil in a large saucepan then saute the onion and carrot for 3-5 minutes until slightly softened.
Add in the pre-cooked beans, mix in the soy sauce, tomato puree and the mixed herbs and simmer on a medium/low heat for 15-20 minutes.Season to taste if you wish. Meanwhile boil the potatoes and mash them with your choice of butter. Pour the bean mixture into a casserole dish, spread the mashed potatoes on top, and bake in an oven until the potato is crisp and brown.
